coffee banana chocolate chip muffins

Don’t you hate it when you correspond with someone for weeks, schedule a meeting and then they stand you up? That’s never happened to you? Yeah, me neither… Anywho! We had a few rotting bananas in our midst so what better way to use them than to make muffins, eh? These are the most moist muffins I’ve ever had, and the addition of the coffee is subtle but gives it that extra ha-yah.

What you’ll need:
1 cup butter
1 cup sugar
1 egg
3 ripe bananas
3 tablespoons strong coffee
1 teaspoon vanilla extract
2 1/4 cups all purpose flour
1/4 teaspoon salt
1 teaspoon baking powder
1 cup semisweet chocolate chips and a little extra as toppings

Preheat oven to 350 degrees. Mix butter, sugar, egg, bananas, coffee and vanilla on low speed for about two minutes. Add flour, salt and baking powder and blend until the flour disappears. Fold in chocolate chips. Bake for 25 minutes and cool on wire rack, makes about 18 muffins.
