easy peasy fried rice

Do you ever have days where you’re like, “what the heck am I going to cook today?” Well, that’s me pretty much every day, and you would think with more time on my hands these days, I’d get fancier. Au contraire, my friend. On those days where I lose all motivation to get creative in the kitchen, I always resort to my easy peasy fried rice. Fly lice! It’s fast and easy, and if for any reason you mess it up, well, perhaps all hope is lost.

What you’ll need:
2 tablespoons butter
3-4 cups frozen veggies (I love the organic foursome veggies from Trader Joe’s)
3 large eggs
6 cups cooked rice
1 1/2 cups soy sauce
2 tablespoons sesame oil (optional)
2 tablespoons roasted sesame seeds (optional)

Melt butter in large skillet and begin to cook frozen veggies on medium heat. Cook until veggies are thawed and season with a sprinkle of salt and pepper if you so desire. Scatter all veggies to the outer edges leaving the center of your pan empty. Crack and cook all eggs until you get a soft scramble in the middle and season with salt. Mix eggs with veggies. Add rice and pour soy sauce over rice and make sure it is incorporated in all the rice. Thoroughly toss everything together. Add sesame oil and sesame seeds and give everything one last toss. Garnish with cracked pepper.
