Strawberry season is upon us here in Massachusetts, and I couldn’t be more thrilled. There are so many wonderful treats and drinks and jams to make with strawberries, and there’s nothing more refreshing and simple than strawberry infused ice water after some sun at the beach.
As soon as I found a way to simplify a refreshing sangria, I knew I had to try it, and it was a hit. It’s just equal parts red wine (I used a Shiraz) and Sierra Mist (or Sprite), ice and strawberries. I fill a tall glass with ice and about two to three chopped strawberries then fill it halfway with the wine and the other half with the soda, stir and then top it off with some mint. Sit back and relax.
For a quick and super easy dessert during the summer (it’s great for when you have guests over too), I assemble a warm biscuit, whipped cream and strawberries. If I don’t have time to scratch up homemade biscuits, I’ll just throw some Grands biscuits in the oven and then whip up some whipped cream (I always make whipped cream from scratch). I take a quart of heavy whipping cream, add a little less than one tablespoon of vanilla extract, one cup of powdered sugar and mix in my KitchenAid mixer on medium speed for a few minutes. Switch to high speed and mix until stiff peaks form. Assemble and destroy.
