vegetarian naan pizza

Since my niece was born two days ago, I’ve been fixing quick meals because a lot of my time has gone toward staring at her pictures and facetiming with the new babes. “You remind me of the babe. What babe? The babe with the power. What power?” Labyrinth? Anybody?

What you’ll need:
Naan
Tomato paste
Arugula
Fresh tomotoes
Mozzarella cheese

So depending on how many you’d like to make will really determine how much of everything you’ll need. I usually make two to three at a time. Spread out the naan and generously lather on the tomato paste. Slice tomatoes and place them on along with the arugula. Spread cheese all around. Place in 350 degree oven and bake for 15 minutes or until cheese is melted and browned. I personally like my cheese on top, but you can arrange your toppings however you like.
